200 litre bain-marie pot still. The first distillation of the pomace produces a water-alcohol slurry called “flemma”, with a maximum of 20% alcohol. The second distillation brings the product to 80% alcohol. After a resting period in stainless steel, it is refrigerated to -10° C and then filtered to eliminate the oily substances produced during distillation. Then the grappa is blended with water from a microbiologically pure source, to reach the desired alcohol level.
